Anyone know of any videos showing a dealer uncrating and assembling a CVO Street Glide or any other CVO for that matter?  I can't seem to find any...

I don't think I've even seen photos of dealers uncreating and assembling the bikes.  I am curious to see what needs to be done to complete a build that the dealer charges their prep fee for....

When I bought my  03 Road King Classic the dealer let me watch and take pictures as it was uncrated and the final assemble was being done.
Basically, take the box off the shipping platfoarm, take protecting plastic off as needed, I sat on the bike for the handle bar adjustemt, they put on the windscrean, rolled it off the platform, hooked up the batery, checked the fluids, added gas than started the bike. They did look over the bike to check fasteners, air pressure,  air shocks, lights and a list of things.
Not sure if they still do allow watching or did for anyone else, as I was a special case I am sure. And maybe I still am.
But it can't hurt to ask if you bought 1 and had to wait 3 months like I did.

If you ask I think most will (especially w/everyone having cell phones these days).

There have been members in the past that have had their salesperson contact them when there bike is due/arrives and have taken pictures for themselves of the "birthing" (uncrating).

It was more common for members on this forum back in 04-08.  I posted pics of my 04 SEEG being uncrated, plastic removed, etc. before they wheeled it in to put the bars, windshield, etc. on it.  Like most back then, I waited months for it to get here, after I put down the deposit.

Watched mine get unloaded from truck.  This one was my 3rd I watched get unloaded from truck.  They were never in a box.  All cam on special metal pallets with a white cover over them.
