I copied this from another site hope it helps
"You will need to be able to access the side of the carb, but shouldn't have to remove it. It might help to remove the aircleaner and pull the carb out some for easier access. The cable is one unit so it stays in the rubber sleave. The enricher cable unscrews from the side of the carb and off the bracket on the petcock side of the tank then pulls out. Loosen the nut on the back of the "choke" knob bracket and then loosen the knurled nut just behind the knob. Pull the whole cable thru and replace with the new one. Don't overtighten the nuts on the choke knob - just snug em up."

Pick up the replacement cable.  With that in hand the task is almost completely self-explanatory.

Only one more tip.  Loosen the front tank bolt, take out the two on the rear part of the tank, lift up the tank slightly and throw in a tennis ball between the frame and the rear of the tank.  It's a trick we use at our H-D shop and allows you to get a wrench on the nut to tighten the enrichner cable to the tab it attaches to.
