I ride twisty single lane mountain roads all the time and in my line of work, I drive about 1200 miles weekly in a company vehicle. You’re asking about 2 different situations in my opinion. First, if I run into someone experiencing road rage, I disengage by putting distance between that vehicle and myself quickly. Same for if I see someone driving recklessly endangering themselves or others. They could be mad or worse under the influence. Last thing I would do is pull a weapon.
Second, I generally ride much faster than most vehicles on twisting, I never pass someone and linger in front of them. All they see is my tail lights disappearing. If I run into someone who wants to race, I let them have their fun and keep a safe distance.
