Title: Preferred Type of Dyno

When searching for a shop to make a few Dyno Runs,
What type of Dyno machine is the most preferred?
What questions should I ask?
  My 98 King has S&S V124 with Powerhouse 595E cam, S&S Big Bore Super G with Thunderjet Pro. RB Racing LSR2-1 with 2" primary headers.
   I have the RSR AIR/FUEL Meter that I used to tune the jetting on the streets and highway everyday use in the real world.
  I am at 300 feet elevation A/F ratio stays constantly
Between 13.8 and 13.2. Surprisingly when I rode to the Smokies the A/F stayed between 13.8 and 12.7.even at 6500 elevation. On the highway I ran motor between 3200 to 4800 rpm occasionally.
I did take rpm to 5200 once but didn't have time to look at A/F meter. Bike was hauling ass!
