Your BBQ has GOT to be great George.  A man with priorities like yours has gotta be great at grillin' & BBQin'.

The best is firing up the smoker several hours before daylight.  The second cup of coffee gets a splash of bourbon and as the sun comes up I celebrate with a cold beer.  The world stands still when my smoker is going.  I'll have a cigar with a glass of bourbon in the afternoon.  I could never open a restaurant.  Have you ever seen a man at the grill of a BBQ joint with a beer?  he just looks nekkid without it.

Many years ago when I was still a semi-young whippersnapper a fellow who was very wise in the ways of beer told me this:



Mike, don't get the fire in your Weber going too fast.  Take your time.  Waiting on a fire to get hot for 3 beers is better than waiting 2 beers.  Just one of the more memorable moments of my beer education. At that point I was Michelobing to my heart's content.  Ahhhh....memories.

 Definitely words of grilling wisdom. I find if it takes 4-5 beers, that's o.k. too...nothing should be rushed when grilling. George-you draw quite an awesome mental picture of the perfect grilling day!

I put some kingfish to the smoke this mornin, it'll be done whenst I get home around 4...I'll cool it off then make some fishdip and commence to swilling beer.  Thas my plan and I plan to stick to it by gum!
