I had a '12 CVO Ultra and now have a '14 FLHTKSE. I bought the docking plates and hardware from HD. I also purchased a license plate light to mount under the cross bar for the turn signals. That is a standard Street Glide part. Purchased a curved chrome license plate bracket/frame to mount the plate. You will also need the Tour Pak detachable bracket to fasten to the Tour Pak. On the '14, HD made it very easy to disconnect the wiring. All the plugs are between the seat and Tour Pak. I then just neatly fold them to be hidden under the seat. I don't use the CB or FM, so I didn't relocate those antennas.
I'll have to say though, the stock seat looks way too "fat" without the Tour Pak on. I was thinking maybe a stock Street Glide seat may look better, but haven't purchased any seat yet. Oh yea, when I mounted my plate under the cross bar, it does cover about 1/2 of the CVO medallion. Kuryakin has a plate bracket/frame with a tri-bar light which I think would completely cover it.
