Are you sure it has the factory, unmodified seat?  I am 6’1” too and my bike, being a 2004, has a shorter frame than yours but I don’t feel cramped at all.  I did recently replace the factory handlebars with LA Choppers 10” Twin Peaks and that made a huge difference in comfort but even with the factory bars I never felt cramped.  As far as the footboards, I added a 1” extension kit from   eglidegoodies which really helped to get my legs out away from the A/C and tank and also made all the real estate on the footboards usable, before I could only use about 1/2.  Also the extended shifter arms and brake arm made more room for my size 13 boots.

Find a new seat that has a longer seat for you and a smaller passenger pillion before you change anything thing else

Mean City Cycles can rework your seat to move you up to a couple inches, and maybe add floorboard relocation brackets (moves boards out 1" & forward 1").
