i havent gone OCD on my beer productions, still do a partial boil, have never had bad results. thats not to say i wouldnt get better results if i steped up to OCD levels, but i'll stay in denial over that one.

i think more then a few of our CVO brothers/sisters will vouch for my beer

Thats, the bottom line, if your beer comes out good, keep doing what your doing! I knew a guy that one out of three batches were infected. He also bottled, some bottles weren't clean enough, so you never knew what to expect, I stopped drinking his beer! :-\

In the 20-30 batches of beer I've made, I've had ONE bottle that was bad.  Like Eagle1 said, I use spring water in 5 gal size.  To get your mind in the right place you need to understand that you are growing yeast, not making beer.  The wort happens to be a pretty good media for unwanted organisms as well.  The cleaning and sterilizing is single handedly the biggest pain about home brewing.

Different water has different amounts of good and bad minerals. If your beer comes out good, then keep using the spring water. Just like taking a shower, if you go somewhere with soft water you can't get the soap off, hard water and it strips everything. The same with the sparg, if the water is soft it may not carry away enough of the sugars, to hard and it will strip more tannins and other things you don't want in your beer. Also the chemistry affects the style of beer, not like yeast, but different areas make different beer styles because of the local water. A really good book, if you don't already have it is The Brewers Companion, by Randy Mosher,especially if your trying to make a beer that you don't normally brew.

The name CascaZilla is a play on both the name of our local Cascadilla Gorge and the monster amounts of Cascade hops in this beer. This red ale gets its distinctive color from a healthy portion of caramel malt, which also lends some body and sweetness to the beer. Thats exactly right Neil, you can make great beer at what ever level your at, every time you step up your process your not going to see huge changes, but instead just little ones that most wont even notice, but as your knowledge and taste for perfection grow, so will your process to achieve it.  :drink:
