What is the best home brewing kit for a first timer? I don't want to just pour ingredients together, I want to really brew. I love IPA's...any help would be greatly appreciated!

Give Wendy at www.letsdowine.com a call. Tell her that her neighbor Jim recommended it. She'll have 20-30 different kits on the shelf and let you know all of them. They have light styles. I brewed up a bourbon barrel imperial porter Friday. I'm looking forward to that. I have a glass of IPA made with only dark malt. Can't call it "pale" anymore, more like a dark india ale.

Thanks Jim, I definitely will! I'll have to tap your knowledge to make a few batches...bourbon barrel porter sounds like a real winner!

I made a Bourbon barrel stout about 7 years ago, added oak chips that I steamed to sanitize to the fermenter, then a cup of Bourbon to the bottling bucket for a 5 gal batch. Was really good when it was young. As it aged the oak diminished and the Bourbon became more pronounce. It was a free batch, our brew club received one free batch of ingredient a month from a local brew shop, so I thought I'd try it out. I don't like many of the now popular Bourbon barrel beers, many have an overpowering Bourbon taste, should just be a hint and not cover the beer taste, like it was aged in a Bourbon barrel.

This kit came with a 50cc bottle of bourbon concentrate.  I was thinking the same thing about the bourbon being too strong.  This is the concentrated flavor that moonshine makers use to make their distillates pallitable.  I'll still use it all.  I like bourbon enough to have it be a distinctive flavor within the final product.  It also has oak staves for aging in the secondary.  I'll let it go a few weeks there to maximize the steap.
