Welcome to the site!

There's a bunch of info on your bike at this site. http://www.scribd.com/doc/57533884/2007-Harley-Davidson-FLHTCUSE2-CVO-Ultra

It says your trans holds 1 quart.

Welcome to the site. Joe is right by the book but for some reason on my '07 I always had to put a couple more ounces over a quart to bring it to the proper level. Redline Shockproof will quiet down that fifth gear whine a little bit.

Yes the Shockproof helps but you will always know your in 5th gear and that's not always a bad thing.
