Question.  Can they embroider any model into the center of the logo?  I have an FLHTCUSE3.

Shouldn't be an issue to change text in the bar portion of the logo. That is a separate stitch element. Depending on the embroidery shop, they might have to experiment which could result in some $'s. They should have a choice of fonts. If not, you may want to shop it to another embroiderer.

I got two patches from Apparel 2000. They look great and are great people to deal with.

Patch sewn on my Screamin Eagle jacket. It looks a little different with the border.

If you know the font-type and the size, it should be easy for the emb.-shop, to put the "right one" in place.
