Looking to find out what came with the bike when new at time of purchase since HD has been making cuts on accessories. I know the 30k headsets but what else came with yours ?

There's a list in the "Your Motorcycle", "Premium CVO Items" section of the Owner's Manual,.  It is MUCH shorter than the lists from ten years ago.

 The following items are included with your new motorcycle. Some may be found loose while others were installed during dealer setup.

    Key fobs (2)
    Owner's kit/manual
    Owners manual cover *
    Boom! Box owner's kit
    Saddlebag liner kit, carry out
    Helmet headset
    Motorcycle cover
    Leather dressing

* Item not provided in all markets.
