So who is running stock?
I have a 2015 CVO Ultra Limited. I purchased the bike used five years ago and it came with Rinehart Slimline duals and 4" Rinehart mufflers. It's way too loud.
I added the Fulsac screens and blankets but it's still too loud.
The bike has a Power Vision dyno tune done by an experianced tuner but it has a torque dip around 2500-2800 RPMs which I can feel and hear while accelerating to highway speeds.
I am seriously considering returning the bike back to stock. I have a header with the cat and the correct CVO mufflers.
Is going this route a mistake? If so, why?

I have a 2014.  Fullsac head pipe with stock CVO mufflers for 35,000 miles.  Happy with lack of noise.  It is slightly louder than when new.
If you use the stock head pipe I would take the cat out.  Less heat.

I had a 2015 CVO Limited I bought used with stock exhaust. My plan was to keep it that way since it came with a Harley extended warranty.
While on a 4000 mile road trip in the summer I noticed the heat from the header increased. Assumed the bike kept tuning itself to the leanest point. It was so bad that I changed out the exhaust when I got home. New 2-1-2 header pipe and 2" Fullsac cores in stock mufflers and PV tune. It ran great, no more heat issues, and I didn't think it was too loud.
You'll most likely lose a little power going back to stock and need a tune or go back to stock settings. Some people have the catalytic guts removed from the stock header to improve flow which also will reduce heat.
The dip in power/torque could be caused by the dual header.
Just my experience and opinion.
