Easy way to find out: Attempt to add a new headset to bike, if you get to the paring page, the Whim is installed, if you do not get that far, you do not have it.

I’m getting myself up to speed on the situation. I followed through and purchased the behind the neck headset. I paired the headset to the bike last night. Now I see the situation I am in is I’m at the same place I saw one of the posts here being in. The headset works but I can’t do any kind of voice commands. CarPlay works but it disappears once I disconnect the headset. Those would be the two issues I am still looking to correct now. I’m on vacation and traveling so I haven’t had a lot of time to read up on things or work on solving anything. I’ll probably be getting back home in a few weeks and then I’ll be able to really concentrate on everything bike related.

All CVO's with the wireless headset have a Whim

Yup and for 2021 due to Apple, Harley disabled CarPlay unless unless your headset is connected for safety reasons.

My 2019 CVO require head set to be connected for CarPlay. Thats been since day one. There was a work around a dealer tech could do, but apple made Harley stop doing that

Funny, my 2019 rgs loads up CarPlay with no problem when my phone is plugged in. Don’t know if it has whim installed though.

How would i go about getting apple car play on my '21 CVO Tri Glide & keep warranty in tack on the GTS

Apple CarPlay should work fine in the 21 CVO. Pair head set to bike. Pair phone to bike. Plug phone in to bike. CarPlay should come up. If it does not, just to make sure projection is on in the GTS settings.
Unfortunately sometimes, on occasion CarPlay does not come up and you have to unplug and plug phone back in.
I use CarPlay 90% of the time
