Check engine light after changing baffles??

I have a 2020 CVO RG with 250miles in it. I installed the Fullsac power core 2.25 baffles over the weekend, and on my first ride the engine light came on.

Could this be related to the change, or something else, has anyone else experienced a engine light coming on because of changing the slip-on pipes

Not unless you unhooked something and forgot to connect it - Can't think of anything electrical you would have gotten into...
Check the codes and see what it is...
1.Press and hold the trip Odometer trigger switch on the left Grip while turning the ignition switch on.
2.Release the Trigger button and the word Diag should appear in the Odometer window.
3.Quickly press trigger to toggle between the different computers on the bike and if a Y is present then there are codes.
4.To read the codes just Long Press while the Computer with the Y is on the display.
5.Press and hold while a code is displayed to clear it.

Exact same thing/codes happened to me once. When I checked with my guy he explained what it was and recommended that I clear the codes and move forward, and they have not come back since.  :2vrolijk_21:

Loss of connection with Amp

I am guessing that while you had the saddlebags off You fired it up to hear the exhaust?   
Since the Amp is in the left saddlebag, the system did not see it, and set the code.   Not sure if you used a lift, but but the other could possibly have been from spinning a wheel while on a lift with the key on?   I'd confirm everything is hooked back up and clear 'em and see what happens.

You are correct on the listen to the exhaust with the bags off, I forgot about that.

I did not use a lift, so there was no turning of the wheels with engine on, should I be concerned about the VSS (get dealer to test) or reset it and move on?

Check the electrical connection to the VSS to make sure it wasn't loosened or damaged, clear the codes, and ride on.  If the code returns, then yes, take it to the dealer for diagnosis and repair.
