Chuck,
I live in Springfield, Mo. PM me and I can give you some information on some good roads around the area. Up around Stockton Lake is good and remote with some great little restaurants around the area. PM me and I will give you the news!

Spend some time in Eureka Springs.  Pretty town.  Great food.  If you don't want to stay in town there is a small place west of town called Pointe West.  They have a website.  Their place overlooks the lake.

If you make it to Eureka Springs, there is a "Biker Friendly" motel... Bikers Rest.  The Iron Horse Stables is SW from Eureak Springs, but they were closed when I was there a few weeks ago.
We stayed at the Razor Back Inn in Eureka Springs.  The rooms are pretty nice and $49 - $59 per night.

The Roaring River State Park area in SW Missouri has some awesome roads also
