I would say you have the classic discussion going on like the owners/collectors of old cars and trucks have. Some want an old vehicle in factory condition with no mods and others like a hot rod with all kinds of modernization and improved features.
My .02 but if your intent is to have a "collectable" that you will seldom ride and want to get top dollar for or put in a museum some day -then return the Fatboy to stock. (Think of how rare a truly stock Harley is compaired to all the customized ones.)
If, on the other hand you plan to ride the wheels off of the Fatboy then mod it to your liking and just enjoy the bike.  :2vrolijk_21:

In my experience as long as you make changes that were available during the period you will not effect the value as a classic. Like your exhaust was probably not available at the time (maybe it was) but would be easy to put back.  The handlebars were probably not origonal but were available. Cutting the frame or changing the drive line would take you out of the classic catagory.

They are only original once....

factory paint is the factor when being judged as an original...performance and appearance parts can be removed for judging.  35 years old is the current qualifier for amca...

From someone who has run the gambit from restored, originals, and period modified toys,,,best of luck.
