That's the same phenom that cause planes to fall out of the sky! When water droplets become super cooled they freeze when they hit the air speed sensors. Water drops freeze when bumped.

Examples of this are all over Youtube; but doing it with beer :drink: .  The flash-freezing thing got enough press Mythbusters even had it on one of their episodes six months or so ago.
