Yes you do. At least it would be best. The bike is already real lean and if you introduce more air and better exhaust flow, it will be worse. Look at a TTS from Fullsac. They will make you a great deal and great support. It is easy to install.

Not trying to bust your chops denis, but this subject has been covered extensively in many, many threads on the site.  You might want to try the search feature to find a ton of previously posted information without having to wait for people to chime in on your thread.

There is no single 100% correct answer to your question.  Is a tune absolutely required?  No.  Is a good tune highly recommended?  Yes.  You just spent nearly $40k on a motorcycle, it makes sense to me to spend a few hundred more to make sure it runs as well as it can.  You don't necessarily have to go the full dyno tune route, there are some very good canned maps available from folks like Fullsac that are highly recommended by plenty of people on this site.

A dealership will cut out the catalyst?  That's something of a surprise anymore.  Especially in a major metropolitan area where one might expect more oversight.  The fines they face for that kind of thing are just scary.

First off, you don't want to drill out the CAT.  The whole collector is filled with the catalytic material, also the front header pipe sticks into the collector farther than the rear header pipe does, so you could and possibly will mess up the pipe if you drill.  The best bet is have it cut (or cut it yourself) in half and air chisel out the CAT material, then weld it back together.   Second, a dealer that is going to charge you $1100 to put the baffles in and take the CAT out, is ripping you off badly.  Max, $240 labor for the CAT removal and $160 for the baffles.  If you're going to spend $1100, get the Fulsac X pipe (it uses the stock heat shields), and either put the Fulsac cores in yourself, or buy a pair of your favorite mufflers, and a SERT or TTS and do it right.  JMO.
