I have the 2 inch Fullsac and put the stock insulation on their baffles and love the sound deep and not too loud.

I heard that removing the packing would change the tune (as in HP) also. Is this true?

I didn't notice anything.  Bike ran just as well without packing as it does with packing.  I ended up cutting out about 3/4 of the packing Harley crams in there when it's stock and now have just one layer that wraps completely around the inside of the cans.  Best sound for me.  Was just slightly on the tinney, metallic sound without any packing for my taste.

I had the 1.75's to start with and found them kind of "barky" . Called Steve and he recommended going to the 2" , I did and like them much better. They have a deeper tone at idle, talk to you a little more when you blip the throttle and are MUCH easier to listen to at highway speeds. Makes a big difference in your fatigue factor after a long day at highway speeds.
As for the wrapping , I have tried all sorts of different approaches to wrapping from none to stuffing it completely full ----------------Ended up just putting the exact same setup that came with my stock mufflers back in over the fullsac baffles ---------no more problem!
