The injectors are shut off on zero throttle decel until about the 2k area.  That is normal.  When you barely touch the throttle they turn on again. Is it possible you are not used to a larger displacement engine with compression that will engine brake harder than a stock one? The effect would also seem worse if you were in a lower gear running the rpm high on decal.
