I've experienced the "tail waggin the dog" and boy was it ugly!  I was pulling a 16' flatbed with a 49 Dodge Power Wagon on it.  What caused it was not enough tongue weight.  I see you addressed the toe in, but what is the optimum tongue weight to prevent the waggin?  Also what speeds can you safely tow at?

IMHO - tongue weight should be 10% of total trailer weight. That of course is assuming that you aren't pulling over 350 to 400 lbs behind your bike. The heaviest I have gone is 300 lbs --- I have seen "passengers" that come close to that but ------life is to short to ride with fat ________.
Fastest safe speed ?   When pulling a trailer you should probably stick fairly close to the speed limit to allow for the "safety margin".  Having said that ---two years ago on the way back from Sturgis, driving across Wyoming and passing a bunch of "slower" traffic, I maxed out the BMW LT pulling my last home-built (GPS indicated speed was 122). I stopped at a pull-off about 15 miles down the road and a raft of bikes pulled in about 5 minutes later questioning both my sanity and the BMW's abilities.   Oh well - you only live once ;)

Here's my trailer. 

Two big advantages:

     It leans with the bike and tracks in the same footprint as the bike.  Took it fully loaded through the "dragon" last year, literally didn't notice it was there.

     It's small enough to roll into the room so security isn't a problem.

Two main disadvantages:

     Relatively narrow turn range when backing up (not a problem when riding).

     It don't come cheap.

Could you please post a picture showing the hitch setup for your bike and trailer. Just got back from a 3000 mile trip with about 60 pounds on the tour pack and a passenger and was a little top heavy at slower speeds. I think a trailer is the way to go.Thanks.

Here is a picture of my bike/new to me 2000 Turbo 2+2 trailer that was in excellent condition and used little.   Just a few easily repaired nicks on the rear lid and replacing a bad wheel as the outer bearing was loose in the bub.
