Congratulations on the bike and welcome to the site - from England.

Couple of things I did with my '07 SERK.

Swapped the passenger pegs for adjustable foot-boards - (wife not happy...with pegs) - used the passenger pegs as additional highway pegs
Swapped the seat for one that gave pillion a better ride - (wife not happy...with seat)
Swapped pillion back rest for one with better support (and luggage rack) - (wife not happy...with stock low back rest)

Now looking to swap wife!!

The head gasket on your potential 07' SERK may have been replaced under warranty already but there is a service bulletin to do much more than that.  I believe the number is 905.  You can find it here or just go to the HD web site with the VIN number and find out.  Good luck.  Enjoy the bike.
