I have a question. Bear in mind I know nothing about this tuning, just trying to learn.
I see all these different set ups and see all these different numbers. Why is is that 2 bikes with identical add ons run different numbers sometimes as much as 5 horses or more and 10 or so in torque. Is one tuner just better at tuning, is it in the bikes, or does one tuner know how to monkey with the machine to produce higher numbers by simply adjusting things. Ten I will see a few bikes that are same in set up and 2 of them are within a few horses of each other and the 3rd bike as about 12 more horses and 15 more torque Please help a novice understand. And what does it mean, if 2 identical bikes have a 5 hp difference and 10 lbs of torque, how much faster is that bike over the other? Or  is it just bragging rights?

Much of dyno report usage by owners is bragging rights.  Don't assume, however, that differences in the reports from otherwise identical bikes is an intentional act by the tuner or anything "fishy."

The dynos themselves aren't all the same.  They are machines that are comparatice devices.  They're not there for absolute measures.  Different dynos will simply vary a bit.  They can be set to vary one way or the other intentionally.  But even with everything the same as they can make it there can still be differences.

Also, two identical bikes may be identical, but the weather they ran in might not.  A bike on a cool day with nice dense air and low humidity will run better than that same bike on a hot muggy day.  So even when they're the same they're not really the same.  And that doesn't address differences in manufacturing tolerances during assembly of the platform.

As soon as I can get the parts together I am dynoing my 09 se Ultra What would be acceptable hp and Torque. Mid 90s for HP and low 100s for torque?
This would be a 110 engine
Zippers max flow
Super tuner
Harley non cat head pipes( if I can find someone to ship to me here in Ca) if not Vance and hines Power duals
I have not been able to locte the Bub 7 Slip ons so I may end up with the V % H Basic slip on I have those pipes on my other bikes and are happy with the sound

Just last Tuesday watched as a relativelely stock 110 was tuned by a very good tuner.  It got numbers very similar to what you're suggesting.
