Performance modifying a Springer 110 CVO, what to do?

OK, I just got a new '09 Springer CVO, I am "old school" I modified the hell out of a '94 FXSTC carb bike. The bike is nice but needs more "pop". I want to do a package  all at once, cams, heads, higher compression pistons, pipes, EFI mods and mapping. So I kinda know the drill but lack the parts knowledge. It's not a highway cruiser it's a day rider, here's what I heard and I need suggestions, preferably first hand knowledge.

-For a cam I keep hearing "SE 251 cams".
-Heads I need suggestions, just port and polish or aftermarket?
-I hear compression is 9.8 OEM, should I go to 10.5 or 11 to 1 for pump gas (91 octane in Cali)
-Pipes I have no idea anymore, they have to be loud, my last pipes years ago were "Python IIs"
-I have no idea about EFI, I used carbs, I hear 50mm throttle bodies are the way to go, opinions?
-I've never dealt with ignition mapping, is it just a flash?

My local Harley dealer will do the work here in northern Los Angeles, I'm not wrenching on this one  :confused5:

Any info or additional add ons will be greatly appreciated for a dinosaur like me, thanks in advance.

I have a set of heads modified on the shelf done and ready to go for the 09. Those with the 251 cams and Cycle Shacks and a custom dyno tune by a good tuner will totally change the bike.
I have attrached a typical dyno run and this was a so so tune and poor pipes (V&H longs)
You could expect more from 2-3k with a better tune and pipe
