I'm sure this has been posted before. My new 2009 SEUC has a high pitch noise in first gear when I let of the throttle. Normal?

And then lose the Syn 3 (in all three holes) and see how it goes.

First and fifth gears are straight cut gears, and they will tend to be noisier than the helical gears used for second thru fourth and sixth.  However, they should not be excessively loud if they were machined and fitted properly.  Put some break-in miles on it, then get rid of the motor oil in the trans and use a real gear oil.  Get your dealer to let you try a couple other bikes for comparison (they don't have to be CVO's, the trans is the same for standard bikes and CVO's).  Unless yours is noticeably worse than other '09's, don't worry about it.

What type of oil should used in the trans?  My 08 whines a little but not to a degree where it bothers me.  Will different trans oil improve shifting and the life of the trans, or just remove the noise?

Like a lot of others have been using Redline Heavy Duty Shock Proof, looks like Pepto Bismal for many years.

The six speeds "whine" to various degrees in 1st and 5th.  My Street Glide whines more in first than 5th, but isn't as noticeable because I'm not in first that long.  My SEUC has a nice whine in 5th, but not first, that has been softened by getting Syn3 out of the tranny.  Like was said earlier, put something like Redline's Heavy Duty Shockproof in the tranny and most of the whine will go away.  If it doesn't then take the bike in and have it checked because they may not have been clearanced well.
