Avon make a tire called the Venom-R that is the correct size, 180/55R18.   I believe the stock HD is a "B".  I'm assuming this is for bias ply versus radial.

Can we use the radial in place of a bias ply on the rear?  What would feel different, or how would handling change?

The speed /load rating is 74V, which translates to 827 lbs. and 149 mph.

The standard tire has a load rating of 80, which is 992 lbs.   A 74 load rating is a very significant decrease in rating and safety margin, and I would never recommend doing what you propose.  I seriously doubt you would find any tire engineer at Avon or Dunlop or Metzler who would tell you it's OK to substitute that tire, and I'll guarantee you that no one at H-D would.
