Most of the time they run the numbers to see if the frame, motor or transmission were stolen.

In 12 years of running a non vin matched bike I have only ever been questioned and that was at the run whatcha brung races during biketoberfest around 2009.  Quick chat about it and they went on.   They did find and confiscate 3 bikes that day.

I was told to carry a copy of my mso and registration/insurance.
