Need help with tune

This last December I had my local Harley dealer come pick my bike up and install the following.  My bike is a 2010 seuc. 
D&D fat cat 2-1 with performance baffle
Andrews 54 cam
.030 cosmic head gaskets
Adjustable push rods
Ventilator air cleaner
SE pro tuner

I just picked it up last week and have ridden it a couple hundred miles.  Over 2000 RPM it runs well. Off throttle it's hesitates and dogs down. If at idle and I crack the throttle a couple times in a row it acts like it loads up with fuel and about dies.
I've been doing some research and question the tune. Below I attached my dyno. You can see a pretty good dip in the low RPMs. I'm wondering if that's what I'm feeling.

If anyone has a similar set up I'm interested in how yours runs and of course if anyone has any suggestion good or bad I'd like to hear them

I've not yet talked to the dealer and intend to do that this week. First I wanted to gain a little knowledge.

I have a 2010 SE Ultra. I had my heads worked by Hillside. Upgraded throttle body to a 58mm + Woods 408-6 cams + larger injectors + Ventilator A/C + roller rockers + adj. pushrods + SEPST. At first I also had some lag or what you might call a slight bog at low rpms after the dealer's tune.

I was able to "clean up" the throttle response by saving multiple runs to my VCI and using Smarttune to upgrade the map (actually I had 4 upgraded maps). By the time I got to the 4th upgraded map the throttle response was great. Very crisp. The throttle response is very sharp right now and it never required going back to the dealer.

My recommendation since you already have the SEPST, is to get the training disk and the cable and run Smarttune yourself to clean the low rpm response. You won't be disappointed and you won't have to wait weeks for the dealer to get to your bike.

Thanks for the advice. My SEPST is part number 32109-08A.  I assume that is correct?  I'm a little hesitant in messing with it. If I strike out with my deal I will likely purchase the cable and training cd and look at it. I plan to call them today and schedule an appointment.

Another thought might be to have the tuner raise the idle by 40rpms. I'm not familiar with how that cam runs in a 110 with stock heads and a Fatcat but you might need a slightly higher idle than normal for off-throttle responsiveness.
