Look at it one way

If you deck them you can't come back even with a gasket but you can go back to stock if you only change the gasket

IMOH  I do not think you would even feel a differance changing the gasket to .030", Just put the cam in and have it tuned, or tune it yourself.   Doc

Save the head decking for when/if you do the heads. Check your piston deck and set that to 0. An easier and cheaper operation than decking the heads.
Just another way to do it, more than one way.
