The headpipe answer kind of depends on what you want. I just did the FS x-pipe on my '11 RGUSE and I am completely happy with my choice. If you core-out the cat, I say thats very questionable, because flow and restriction presented to each headpipe is different. I know others have done it and seem happy, but in the long run, many of those who have, still went to another set of headpipes without a cat.
I found the FS X pipe to be a quality unit. Remember, it has stepped head pipes, and a dyno-tuned X collector, so its much more than a hunk of tubing all TIG-welded together. Mine went on like a charm and everything worked like it was supposed to.
Which baffles also depends on what you want. Smaller means less noise, a little more torque over the less restrictive units. The 2.25" = more noise,less torque at the bottom end of your RPM range. Both mean more PEAK HP on top end. I wouldn't mind seeing some dyno results comparing all three sizes.
