Does changing the number of turns on the shock adjustment change the height of the back of the bike???

Only to the extent that it has less sag, so you're only talking about maybe 1/2 inch at most, unless you compress the springs to the max, then it'll ride like a brick wagon.

There is no shock that will actually raise the rear end from the fully down position other than a true air ride suspension, like Legends, Arnott, etc.  All other shocks, whether by an air chamber or by a spring preload, do only that-act as a preload adjustment.
