On the Arias pistons anyone can buy them from Arias.

The Dyno sheet that Razorback posted started out as a 106 build.S&S 106 kit,SE heads ported by BigBoyz,Redshift 575 cams,hpi55 throttlebody and fatcat.Any questions p.m. me,it's been a stock motor with cams,to a built 106,now a built 120.

This sheet shows the red shift 575's as a 103 with stock heads/headpipe slipons and then as I recall a BigBoyz head port with 575's and a Fatcat

Those are the non-emission version of the 255's.
Mighty short cam, that however does work well for it's intended purpose, but as you increase the swept volume of the engine the compression comes up, under the same/same cylinder head volume.
Nothing wrong with using a cam of that nature, but the ccp needs to be kept in check whatever route you choose.

To the OP
If you have 48s now just mill the heads and run them with a good tune and exhaust. Head work will not provide the value added to put those in a HP range that is worth the money spent. 
This will be a snappy low end torque solution

So what can I expect to gain by going to a 107 and doing head work that you describe? Or would the 54 or 57 be a better choice?  I love the way the 48's start pulling way down low!

Comparing the 54, 48, 57 they are close. There are nuances that separate them nothing big. Pipe will taylor more of how much low end you end up with than that group of cams that are not that far apart. Low end is your focus then stay with the 48 and raise the compression a half point.
With headwork I would suggest another  cam altogether and a much different build still with good manors and reliability.

With a good 107 build you can expect a 110-116 hp and 120-123 torque including headwork and some compression.    

On my 05 Cherry I did Axtel cylinders/Wossner Flat tops with no headwork or compression added cvo 95 cc heads, Rinehart true duals,  and 570 cams made 105/119 on Doc's dyno.    Cam / overlap will dictate your overall numbers as well as whether you do headwork or not and compression.

FYI, Arias NEVER made the cvo 10.50 pistons for the MoCo.  :oops: They are a custom order.

I'm running a d&d fat cat. My biggest concern is at this point, I would like to get a decent return for dollars spent. IE if I'm gonna drop 2 grand on a top end, I'd like some impressive numbers and again, I like the torque to stay down low. The majority of my riding is technical twisty back roads and I seldom exceed 5,000 rpm. Most of the time I'm between 2500 and 4500 accelerating hard out of a curve. I don't want a hot running beast, and I don't want to sacrifice dependability, and I certainly don't want a 'two stroke' cam that doesn't come in until 3500 rpm.

Not sure if you have seen their HTCC 103 piston but with a slight chamfer at the edge of the chamber I have used them successfully and they are on the shelf. They don't look like any I ever saw in the SE book but they come in a SE box, overun of the OEM part.

Funky looking piston for sure, buttttt they make proper custom pistons to work perfectly with the "hemi chamber CVO heads,, in quantity, for only a few $$ more.  :o
