So I added a 21 inch front wheel to my 2001 SERG and love the look but the bike is a little tall now.
I am thinking of dropping the front end 1 inch to get it back to level and look even better.
Is that the way to go? Is 1 inch enough?

If you replaced/raised the front fender, you need to be careful, with a 1" drop, that the lower triple clamp doesn't hit the fender over rough roads.
