I-40 from Cookeville to Kingston is pretty coming over the plateau.
I-40 from Newport over to Asheville is a great stretch but busy.
I-24 from Paducah to just North of Nashville is a nice stretch.
I-75 from just south of Lexington down to Lake City (now called Rocky Top) is a nice, scenic stretch going over Jellico mountain.

I will agree with those, they have some good curves too.  There are a couple nice stretches of interstate in WV also. 

I-70 West from Denver is very good.

We always choose Interstates when we can, rather ride with the cruise and check out the scenery than make constant stop and go in traffic. I do enjoy stretches without exits in the midwest but thru east Tennessee on I-40 is cool, but Twolane has it right, as I get older anytime is great.

Lot of good rides mentioned.  The Roads I've traveled, and my favorites on a Motorsickle are; 
I-77, from Beckley, WV, to Statesville, NC.
I-64, from Beckley, WV, to Lexington, VA
I-81, from Wytheville, VA, to Natural Bridge, VA
I-77, from Princeton, WV, to I-81 in Wytheville, VA (2 Tunnels), to I-26 to Johnson City, Tenn.
I-26, from Johnson City, Tenn., to Ashville, NC
I-26, from Greenville, SC, to I-75, to I-64, to Louisville, KY, (no helment in KY) (absolutely beautiful ride)
Lookin' forward to seein' you guys in West "By God" Virginia!

I have to agree. That section of highway is amazing. Amazed that I forgot about it but probably because it didn't feel like a major US arterie other than the fricking cars.

I-40 East of I-81, over the Smokies into Asheville, NC.
Gorgeous mountain scenery and some quite surprising twisties for an Interstate.

I-82 around Yakima.

I-10, from Jacksonville, FL to just before Pensacola, FL is the most boring stretch of interstate, mind numbing straight road with nothing much to look at except pine trees and pine trees.   It my least scenic interstate by far.

You should try I80 from Chicago west to Cheyenne Wyoming... Nothing... Slow downs for Des Moines and Omaha, and that's about as exciting as it gets.

I-70 east of Denver traveling west from Kansas is in the same category.  Then west of Denver it's a whole new world!

I-25 from Raton, NM towards Pueblo, CO isn't bad, a few sweepers around Raton Pass, and a beautiful view to the West, when there is snow on the peaks...

I do avoid Interstates as much as possible but I-79 from Charleston WV to Morgantown is good.
