Most scenic Interstate rides...What say you

Anybody that knows me, knows how I hate the SuperSlab. Just don't enjoy playing bumper cars with 18 wheelers and other vehicles. Was wondering about scenic rides in the Eisenhower Hwy System as I have stumbled on a few when getting from point A to point B the fastest possible way was required. Need other inputs so if I am in the area, I won't miss a great ride by dodging the slab. I'll start the list:
I-75 in Utah, last 100 mi or so before I-15
I-10 in Louisiana, through the swamps
I-79 in West Virginia, Morgantown - Charleston

Well, I don't know about scenic highways but there is a section of I-65 from Nashville, TN up to Bowling Green, KY that has a lot of greenery and trees. After running the slab out of NM through TX and OK, the green is rather pleasing.

I-70, from Denver West to Glenwood Springs is magnificent.   From Wikipedia :

The U.S. Department of Transportation (USDOT) lists the construction of I-70 among the engineering marvels undertaken in the Interstate Highway system, and cites four major accomplishments: the section through the Dakota Hogback, Eisenhower Tunnel, Vail Pass and Glenwood Canyon. The Eisenhower Tunnel, with a maximum elevation of 11,158 feet (3,401 m) and length of 1.7 miles (2.7 km), is the longest mountain tunnel and highest point along the Interstate Highway System. The portion through Glenwood Canyon was completed on October 14, 1992. This was one of the final pieces of the Interstate Highway System to open to traffic, and is one of the most expensive rural highways per mile built in the United States. The Colorado Department of Transportation (CDOT) earned the 1993 Outstanding Civil Engineering Achievement Award from the American Society of Civil Engineers for the completion of I-70 through the canyon.

I-80 up over the Sierra Nevada mountains from Sacramento to Reno.....if there's such a thing as "scenic" interstate. 

I-5 up by Mt. Shasta in Nor Cal.

I-40 from Cookeville to Kingston is pretty coming over the plateau.
I-40 from Newport over to Asheville is a great stretch but busy.
I-24 from Paducah to just North of Nashville is a nice stretch.
I-75 from just south of Lexington down to Lake City (now called Rocky Top) is a nice, scenic stretch going over Jellico mountain.

That'll getcha started, brother.  And thanks for inquiring about the arm.  Not getting to ride is hurting more than the injury itself.  Hoping it will be better by mid July so we can ride when our Canadian friends are riding down for the first time in East TN.

I-5 from Shasta through Oregon/Washington
I-84 from Troutdale Oregon to The Dalles Oregon...This is a scenic highway
We only have a couple of Interstates in Oregon. Most of our roads are two lanes with short sections of 4 lanes or passing zones.

I've always enjoyed the ride along I-40
from Newport, TN to Ridgecrest, NC

But I have to agree with Greg above that I-70 west of Denver is probably my favourite big slab to ride.

I-10 in Texas from Ft. Stockton to Ft. Hancock (east of El Paso) has nice mountain and desert views.  Usually not many cars, speed limit is 75-80 mph.

I used to be pickier.  Had definite "favorites" that were always someplace better/farther/whatever from wherever I was.  Anymore; not so much.  Now my favorite ride is pretty much wherever I am when I'm riding.
