I have seen corrosion in the tank mounted switch before now. Underneath and out of sight

Strip it out , ( be careful !) and WD40 or similar all the connections inside and out then wipe/blow dry and then spray with electrical contact cleaner in aerosol form.

A manual can help there if you have not done it before

Corroded connectors in there give the exact symptoms you are describing

I would also check the ignition switch connector.
I had a RoadKing that would have a stumble mostly after a right turn.
I pulled the tank apron to check the switch and found the connector loose.
Inspected the pins put some di electric grease on it and pushed the connector back until it clicked the the locking tab.
No problem after that.

Another issue that will cause an engine shut down going down the road without throwing codes is a failing crank position sensor.  Only real way to test this (if it hasn't totally failed of course) is to just put in a new one and see if the problem goes away.  It's a piece that fails just often enough and is also easy enough to change that I carry a spare.  Something that can be changed on the side of the road if need be.
