Understand cat or no cat

Ok so I'm taking on my first ever cam and cam chest upgrade, on my Se 110 stock bottom end with 10 k on a dealership rebuild. My parts list is as follows, Zipper blueprint cam plate. Zippers Rs587 cams. Fueling oil pump and lifters. S&S adj pushrods. I already have 590 lift springs in the heads. So I got a really good deal on V&H PCI Power Duals and Reinhardt slip on with DBX baffles. So my question is to delete them cat and what benefits that brings, or to leave them in and why. Please be advised I'm not a mechanic just an average Joe. Thanks for your input in advance.
