S&S 585 vs 600 Cam

I sent my S&S V111 to shop for upgrades. Bike has a 585 but I have a spare 600 cam from another build. S&S claims both cams power range starts at 3500 rpm. How can this be because the 600 cam intake closes at 55 ° vs 45°. Shop will set mechanical compression to 10.25:1 by CC the heads to 88cc and use .030" head gaskets
