SEST vs TTST.
On the OE Closed Loop bikes, if a competent tuner can put a "comprehensive" tune on a bike with an SEST, this is the guy that easily learn the TTST. Once he experiences the advantages of the TTST, especially in the calibration phase of the tune, with rare exception he'll prefer the TTST over the SEST. A precise tune with excellent ride-ability mannerisms is easier to achieve with the TTST. Yes, a good SEST tune can be had, it's just easier to get the nats azz precision and smooth ride-ability with the TTST.
In addition to a tuners competence, with an SEST, the tune is only as good as the his AFR reading equipment will allow. Some recent findings showed that there's a high probability that numerous dynos are out there whereby the calibration of the AFR equipment is displaying skewed numbers. There's some easy and relatively inexpensive ways to check calibration of the AFR sniffer. But, again the tuner would need a good understanding of his cross checking process.
As you know, there's tooners out there and then there's Tuners out there. Ask plenty of questions. You want your bike to be tuned, not tooned.
