I cooked 6 racks of ribs. If I had to do it again I would have pulled the rack all the way to the left. They would have been in the upper class.

Congratulations Mike.  It's a shame only 6 judges get to taste each entry.  Your presentations all look excellent.  I have to admit that I give a slightly higher score when the pork entry has a pile of bark chunks with it.  Do you spray your brisket with apple juice just before turn in?  Judges are asked to no longer consider the smoke ring a facter but it's hard to ignore and will always be an important part of the presentation score.  Great Job!

Thanks Jester. I do sometimes spray the brisket, but sometimes I will brush it with a glaze. I guess it depends on the mood.

This was a great contest with a lot of heavy hitters.
