The ceramic coating keeps more heat inside the pipe rather than transfering outside (to your leg).  The outside surface of the coated pipes will run several hundred degrees cooler.  This also generates a small performance gain, and increases the life of your pipes.  The main benefit is rider comfort by lowering the temps a bit.  With the heat shields on, there is nothing to see - other than a cleaner reflection in your chrome from the coating.

Okay, now thats another reason to do something else. Is it advisable to do the xover pipe as well? or just the headers?

I finished my exhaust work this weekend.  I went on a 100 mile ride with my wife.  I will say that the Jet-Hot coating definitely keeps the header cooler.  I had the crossover pipe done too.  IMO, I would think that the Jet-Hot coating would keep the bike cooler.  Since the header and crossover are near the cylinder fins and the oil pan less heat is radiated toward the parts you want to keep cool.
