Exhaust Decision made... but confused on the tuning!

If someone could speak very slowly and with little words help me understand the tuning.  I have the 2011 SESG2 and all I intend to add to it are the auxillery lights and exhaust.

I have decided to go with what I know with the Rinehart Xtreme True Duals and the 4inch Rinehart mufflers, I like the Rinehart sound and I want to keep the stock parts in case they are needed in the future.  However here is the question.  Tuning.

At my dealer which I am good friends with the sales manager and know everyone there... I dont think they really know much about tuning.  I could be completely off but I dont get a warm fuzzy when I talk to them about it.

Parts Manager opens the parts catalog and looks at the SESPT... doesnt even mention or seem to know about the SEPro Race Tuner.

and My Sales Mgr friend says he wouldnt let the "Sister Harley Store" (that has the dyno) touch his bike, that they rev it at high rpms for two hours straight, that he's watched them work on other bikes and he wouldnt let them touch his.

All that being said, I can turn a wrench and put things back together when i've taken them apart but this tuning seems over my head, and I'd prefer someone smarter than me that knows what they're doing to work on it.

So... SESPT?  SEPRT?  TTS?  Why? (again with Big Purple Crayon or very little words) what gets me what?  And can i get a good quality mapping without the dyno?  I dont want to spend more $$$ just get a hp or 2 out of a dyno... I think the bike reacts beautifully as it, I just want some sound and a tad more response.

I'm in Texas, just outside of Fort Hood.  I have two dealers 15 miles apart.  Fort Hood Harley, where I bought my bike and were all my service is done, I really like my mechanic and the service.  and Horny Toad Harley (in Temple, Tx) where the dyno is.

Ok, so I have to believe there are good tuners there.  I am sure someone will jump in.

However you do have a DIYS option since you are comfortable with the wrenching part.  Install everything yourself, buy the TTS system.  Downlaod a map that is close to what you have installed & install it.  Then TTS has a built in tuning feaure that allows you to ride the bike while it is connected to your Laptop & collect data.  Then you can update your map from the data collected.

Maybe someone else can jump in about how this is done as mine is an 06 with no 02 sensors so it doesnt work on mine and all my work had to be done on the DYNO.

The TTS is a great unit with it's features.
