This is the business end of the CVO Smoker, where you put the charcoal/hickory in to make the farr...it's got at least three different sets of dampers to control the temp.

The best end of the CVO Smoker...the rack rotate via a small electric motor which drives a pulley ( I assume chain?) that keeps the food from gettin' too much heat in one place at one time.  I didn't count the number of racks, but there are several...enough to feed a small army...
