Does anyone know the Vance & Hines part no. for the Chrome Pro Pipe that fits the 2011 Convertible? On the V&H website they list a part no. (17561) that Fits 08-2011 Softail CVO / Rocker C and also a different part no. (17547) for Softails 86-11. What part number have other people fitted?

Just call or e mail them.  I've had missing parts or hardware and they have been more than happy to send out what was needed to get things going.

I put on the 17547 on my 2010 CVO Softail Convertible which works great.  V&H says it'll burn the saddle bag but I haven't had any problems so far.  It looks and sounds great.  It also seems to make decent power.  I haven't dynoed it but it feels very strong.
