Howdy Cowboy,
I have had and still got my 1997 Ultra since new and love the way it handles, smooth as sitting in the living room and can ride it all day

rode from Canberra to Adelaide a few years back after a Hog rally, was a 2 day trip but not once was I saddle saw, just a little tired as it was in the warmer part of the season.
I was looking at a Dyna for a second bike myself, every time I saw one on the road or dealership I was there to check it out

after time I had a change of mind and decided to get a Fatboy. So as I type away I look over my shoulder in my living room where the beast is parked

My 2008 Fatboy (Candy Red Sunglo) and this bike is the bomb, did heaps to it and wouldn't turn back.
Only problem I found was the stock seat was like sitting on a log

man did my thighs get a wipp'n. Althought the 2012's have a new seat.
Change the seat to the 2008 Springer SE seat to match the console and its so comfy

I would say your on the right track but if your get a chance take one for a blast to make sure it suits your riding style. Foot boards are about 2" lower than your Ultra and I know you will scrape them in a turn. You can always put forward controls on to get a better lean angle.
I had a 2011 Inferno ordered but the wrong color turn up

so I missed out and ordered a 2012 SG

just waiting for it to arrive but is a few months off yet.
Heres a shot of my 08 FLSTF Custom.
There wasn't a 2008 FLSTFSE available so I built my own, was going to put some custom tins on as well but decided to leave it as is.
