I'm new to a SE 110 engine. Bought 2007 with 19k miles. Bikes in excellent condition but when riding I hear what sounds like valve chatter. I was told its normal but this concerns me. Anything I can do to stop the noise? Maybe different oil?

Louder exhaust so you can't hear the valve noise? Sorry but there's not much that can be done about the 110's noisy top end that doesn't involve expensive headwork.

If your only hearing valve chatter, you got one of the good ones my 07 required ear plugs, and a loud radio to survive a trip.

As mentioned above lifters can be a issue.  Lifters in these are know to fail at above 20K miles.  Although I only had less than 5K miles when I did a cam swap, I also changed out lifters to S&S with adjustable pushrods.  My top end noise went away.

Lifter replacement should almost be considered regular maintenance.

Compensator is another known issue.  You should think of changing out before you have problems.  SE Compensator part number is 40274-08A
