I have the optional matching leather tourpack for my convertible , has anyone or can you mount the tourpack rack on the leather tourpacks ?

If you mean putting a chrome luggage rack on a leather tour pack like on a Road King or simular bike the answer is YES. I had a chrome luggage rack on a 99' Road King's leather add on tour pack. I thought I had a picture of it but could not find it. Sold 99' bike and TP almost three years ago. Hope this helps.

is there a certain model for the leather tour packs or does 1 size fit all ?

You can add one to the leather tour paks, just carefully drill holes and use large washers on the inside to distribute the weight. Works well
