Not stressing about the oil or if it is breaking down just want to make sure I am OK. It is running higher than my previous bike and I did not expect that with the oil cooler.
I am not a speed demon and I run between 2500-3000 rpm and I am normally at or 5 above the speed limit.

Thanks for the information

Ok bike hit 265 again yesterday on the way home 77 degree day 1 hour ride home from work. Mix of highway and city driving. Checked the accuracy of the digital gauge by butting it in boiling water and it was within 3 degrees.

Went to the dealer to talk about it. I had been hearing 210-230 was the normal operating range for the oil temp. They called Harley and Harley sated 255-275 is the normal range. I haven't looked in the service manual yet but it is not in the owners manual.

What is considered the Normal operating range. I know we all want 210-220 but I would like to know where Harley has it written and what it should be

I'd be surprised if the typical site member said their experience is "255-275 oil temperature is normal".

To repeat what I stated earlier, I rarely see over 230F. When I do, it's because of slow, stop and go town riding.  I've seen 260F less than a handful of times.   210F to 230F is "normal" to my experience.  I've never seen 275F.  That's with my 110 motors, and with my 120 motor.   :2vrolijk_21:

I have a 2013 CVO Anniversary Road King with 5500 miles. I had a digital oil level/Temp dip stick I put in yesterday. Wife and I went for a ride and stopped at our fav. watering hole. When I parked the bike and checked the temp was at 265. I know these things are not the most accurate but I would think with the oil cooler and the Wards Parts Werks fans I would have had a lower oil temp than that.

What temps are some of you seeing if you have a way yo check

FYI:
To OP question.
My old cvo saw 275 often, my new 103 sees 250-275 often. This 2010 has 79K miles on it, pulling a trailer, 2-up and running just fine.
My S&S sees up to 250 in stop and go traffic sometimes, it has 50K on the motor.
These temps are measured at the oil pan using Marshall gauges.
If you want to do some research about oil there are plenty of tests published.

In the summer when ambient temps are above 90 most of us here in the Lowcountry switch to
Peanut Oil. It's rated to 450 degrees before smoking or breaking down. Then at the end of the season we drain it and deep fry turkeys with it.

Looking for a definitive answer to a question that has no definitive answer is obsessing.

So I'll make one up: If you see oil temps at or above 300 degrees, be concerned.  Be VERY concerned if you're running Dino oil.  "Normal" is always a relative term.  Run a good synthetic oil in the crankcase and just ride the thing without fear of the oil breaking down and damage occurring to the engine BECAUSE of the oil temperature.  Damage to the engine is MUCH more likely to occur because of chitty parts used in construction of the engine.

Your only avenue of recourse, other than getting advice here, is maybe consider changing pipes, tuning device, tuner, oil cooler, etc.  or as suggested, rely on the experiences of other riders with similar bikes and perform scheduled maintenance and oil changes as outlined in the service manual.  Other than that I don't know.  Some here think your temps are within normal range and others think they are high. (your oil temps, not the some)  I happen to fall in the latter category of thinking they are high under the ambient temps and riding conditions you stated.

Not really sure either as stated some say its fine some say its not

Talking with fuel moto they say the tune won't make much difference unless I was running super lean or doing something crazy. They provided the tune and the bike runs well. It is what I would call a mild tune.

A large portion of my commute is 35-45 lots of stops. Has I get close to home lots of 25-35
For now all I can do is watch it and make sure it doesn't get worse.

Other than that not much I can do
