Do you have a tuning device? Sounds as if some tuning runs are in order...

There isn't just one "best" AFR.  What operating conditions are you talking about?  Wide open throttle under load will require one number, cruising down the highway at 60 mph will require a different number, part throttle acceleration will require a different number, etc.  A proper tune doesn't set the AFR at one number for all conditions.

If you have any truly capable and competent tuners in your area you probably should visit one or more and see what they can do for you.

Does that 585 cam need compression to work, maybe that's why his numbers are low?

Running lean and hot, the engine needs tuning not just some tweeking of a calibration table, as mentioned above, if you or a mate have the ability to smart tune then that's an option, if not you need to get the bike to a reputable dyno tuner, damage will occur if the heat is too great.

Keep in mind that you have a counterbalanced engine which eats some power on both sides, so your numbers will never be as good as a touring bike motor.  But, those numbers do sound low.  As mentioned, with today's engines and closed loop operation, there is no "best" A/F ratio, as Jerry mentioned.  One of the guys familiar with that cam will hopefully chime in and talk about the cam and it's compression needs, if any.

If you have the pro tuner...who did the tune? Did a HD dealer do the cams and "tune"?  If so, do you know for a fact that they actually tuned the bike or did they just stick a map in it?  Just because a shop has a Dyno is no indication that they have someone competent to operate it.  I'd say find a good tuner, even if you have to travel a bit to get to him.
